The bad rendering quality can be fixed by pumping the size of your equation, but for some reason There's a very strange bug where the clickable area on the "Insert Equation into Document" button gets smaller and smaller the larger the font size is set.
The largest I've managed to get before the button becomes unclickable is 447 px which shrinks the clickable area to a single column of pixels to the right side of the button. Try it yourself if you need your equations higher quality, then just shrink them down by resizing.
If they fixed this it would solve the rendering problem completely and probably bring the service to a 4 or 4.5 stars
(To be clear I've only ever used this on google slides, I'm not sure how it behaves on google docs)
edit: the max size before the button becomes unusable seems to change depending on the size of your equation. You might have to try several font sizes before you find the largest possible size that works for your equation.
